– 3 eggplants
– lemon
– Natural ham cut into small cubes w/n
– 1 clove garlic
– in 1 c. parsley
– 1 tbsp. oregano
– 1 yolk
– 300 g ricotta, well drained
– 3 tbsp. grated cheese
– salt and pepper

for the sauce
– 1 clove garlic
– 1 onion
– Crushed tomato
– fresh basil


1. Cut the aubergines into thin slices lengthwise. Marinate in fine salt, olive oil and a few drops of lemon juice and pepper; This step will give them flavor and help make them more tender.

2. Mix the ham in a bowl with the seasonings, the egg yolk, the ricotta and the grated cheese.

3. Make small meatballs and fill the marinated eggplants (make rolls).

4. For the sauce, sauté the onion and garlic in olive oil, add the tomato, a little water and cook.

5. Place a little sauce in a baking dish, accommodate the wrappers very tight so they do not open and cook for 20 minutes covered. And to enjoy!
