Ingredients (for 8 to 10 pumps, vary by size):
– 500 gr of mashed potatoes
– Salt and pepper to taste
– chopped parsley / spices or herbs of your choice
– cubes of mozzarella
– 2 eggs
– panko or breadcrumbs
1- Step on the hot potato to avoid lumps. Add salt, pepper, oil and spices.
2- Fill and then go through flour, egg and panko.
3- Take the freezer for about 15 to 20 minutes, prior to frying (this will prevent them from bursting during cooking).
4- The oil must be hot at around 180°C, always neutral and clean oil, so you can ensure crispy and dry croquettes. You can accompany with some sauce or dips.
